
Welcome to our Professional Baking and Patisserie art diploma Course at the TBZ Culinary Academy, a comprehensive three-month program designed for aspiring pastry chefs and bakers. This intensive course offers hands-on training in the art and science of baking, from mastering classic techniques to exploring innovative trends. Under the guidance of seasoned industry experts, you’ll gain a deep understanding of pastry fundamentals, including doughs, batters, chocolate work, Cake embellishments and plated desserts. By the end of this program, you’ll be equipped with the skills and confidence to excel in a professional kitchen, create exquisite baked goods, and pursue a successful career in the world of baking and pastry arts.

- Artisanal Staples: Focaccia, Ciabatta, French baguette, Brioche, and Chocolate Babka.
- Viennoiserie: Mastering the iconic croissant, pain au chocolat, and pain aux raisins.
Confectionery, Sugar, & Chocolate Work (2-Day Intensive)
This intensive module focuses on precision and artistry, turning raw chocolate and sugar into high-end gourmet products.
- Chocolate Mastery: Techniques like tempering, and crafting everything from molded chocolates with nuts to chocolate-covered strawberries and truffles.
- Sweets & Candy: Salt water taffy, caramel toffees, and professional lollipops.
- Shortcrust & Puff Pastries: Creating delicious items like sausage rolls, meat pies, danishes, turnovers, and palmiers.
